Szechuan Chicken

A delicious Chinese dish from Debbie Courtney. Add more Hoisin and or red pepper flakes to spice it up!

Ingredients
- 2 lg chicken breasts – boned and diced
- 1 t. salt
- 1 t. cornstarch
- 3 T. sherry
- 1/4 C. vegetable oil
- 1 T. Hoisin sauce
- 1/2 C. toasted almonds
- 2 dried mushrooms – soaked and diced (or fresh or canned)
- 1/2 t. finely chopped chili pepper
- 2 small green or red peppers diced
- 1 C. Bamboo shoots diced
- 1 C. Water chestnuts diced
Preparation
Step 1
Combine salt, cornstarch and sherry. Add chicken and stir to coat. Sauté chicken in half of the oil in wok or frying pan- 3 to 5 minutes. Stirring constantly. Remove chicken. Add remaining oil to skillet. Stir in Hoisin sauce. Add mushrooms, green pepper, chili pepper, bamboo shoots, and water chestnuts and sauté another minute. Return chicken to cook and heat through. Sprinkle almonds on top and serve on rice.
