Chile Chicken

Ingredients

  • Oil
  • Onion
  • Red pepper
  • Garlic
  • Green pepper
  • Cinnamon
  • Cumin
  • Coriander
  • Chile pepper
  • 14 oz can of pureed tomatoes
  • Chicken pieces (1/2 - 1 whole cooked chicken cut into small pieces)
  • 1 c. Chicken broth

Preparation

Step 1

Sauté 5 minutes in oil – onion, red pepper and garlic. Add and cook 10 minutes more - green pepper. Add spices to vegetables. Add puree tomatoes – stir in 1 c. Chicken broth. Cover cook/ stir.
Additions: unsweetened chocolate (1/2 cup)
Serve with avocado, grated cheddar cheese and sour cream
