Brioche (good/excellent)

Ingredients

  • 4 1/2 cups enriched flour
  • 1 package dry yeast
  • 1/2 cup milk
  • 1/4 cup water
  • 1/2 cup butter
  • 1/4 cup sugar
  • 1 tsp. salt
  • 2 eggs
  • melted butter

Preparation

Step 1

Stir together 1 cup flour and yeast. heat milk, water, butter, sugar and salt over low heat only until warm. Stirring to blend. Add liquid ingredients to flour-yeast mixture and heat until smooth. About 2 minutes on medium speed of electric mixer or 300 strokes by hand.
Coer and let rise in warm place (80° to 85°) until bubbly. almost 1 hour.
Stir down. Beat in eggs. Add more flour to make a soft dough.
Turn onto lightly floured surface and knead until smooth and satiny, about 20 minutes. Shape into ball and place in lightly greased bowl, turning to grease all sides.
Cover and let rise in warm place until doubled. at least 1.5 hours. Punch down Let rest 10 minutes. Remove about 1/5 of the dough.
Shape each portion into smooth ball. Place in greased 1 3/4 quart brioche or baking ..
With finger make an indentation in center of large ball.
Place smaller ball in the indentation. Let rise in a warm place until doubled. About 40 minutes. Bake at preheated oven 350° 40-50 minutes or until golden brown and firm. Immediately remove from pan brush top with butter. Serve warm or cool.
