Ingredients

  • 1 ) 1.5 table spoon of oil
  • 2 ) 2.2lb fish
  • 3 ) 2 onions
  • 4 ) 1/2 cup pomegranate molasses
  • 5 ) 1/4 cup water
  • 6 ) 2 tablespoons of parsley
  • 7 ) 1 teaspoon paprika
  • 8 ) 1/2 cup sliced black olives
  • 9 ) 1 teaspoon chipotle chili powder
  • 10 ) 1 red pepper (sliced)
  • 11 ) 3 cloves of garlic
  • 12 ) 1 tablespoon tomato paste
  • 13 ) 5 tomatoes peeled and sliced
  • 14 ) 1.5 tablespoons lemon juice
  • 15 ) 1/2 cup of pomegranate seeds

Preparation

Step 1

1) Sautee both sides of the fish in 4 teaspoons of oil then remove from skillet and cover.
2) Sautee the onion in remaining hot oil then add the pepper and let it simmer for 5 minutes.
3) mix the garlic in and add the tomatoes
4) Dissolve the tomato paste and the pomegranate sauce in water and add the mix to the onions along with the parsley, lemon juice, and paprika.
5) Return fish to pan and cover with sauce then cook for 10 minutes.
6) Add the olives and the pomegranate and the spices and let everything simmer for 5 minutes.
7) Serve either cold or warm and cover with sauce.
