Broccoli Potato Soup

Ingredients

  • 3-4 T butter
  • 2 medium size onions - chopped
  • 2 tbsp. Flour
  • 6 medium size potatoes, diced
  • 1 1/2 tsp. Salt
  • 1/8 tsp. Pepper
  • 2 c. chicken or vegetable broth
  • 1 tbsp. Chopped parsley
  • 1 pkg. frozen chopped broccoli or fresh broccoli chopped
  • nutmeg
  • Grated parmesan cheese

Preparation

Step 1

Melt butter in a large stock pot. Cook onions in butter until tender. Add flour and blend well. Add potatoes, salt, pepper and broth and cook until tender. Add milk, broccoli and parsley and heaat throroughly. Sprinkle with a little nutmeg and grated Parmesan cheese and serve.
