Zucchini Bread

This is a family favorite served at all times of the year....but my favorite when I have zucchini out of the garden. I make extra and keep it in the freezer.

Ingredients

  • 2 c. zucchini (grated)
  • 3 eggs
  • 1 C. oil
  • 2 C. sugar
  • 3 t. vanilla
  • 2 C. flour
  • 1/4 t. baking powder
  • 2 t. baking soda
  • 3 t. cinnamon
  • 1 t. salt
  • 1 C. chopped nuts (optional)

Preparation

Step 1

Grate zucchini and set aside. Mix dry ingredients set aside. In large bowl beat eggs, add sugar, oil and vanilla. Add dry ingredients and zucchini alternately to egg mixture. Beat thoroughly. Add nuts if desired. Pour into greased 5 x 9 pans. Bake at 350 degrees 45 to 55 minutes.
3 large soup cans can be substituted for the loaf pans.
