Kimchi Fried Rice

Ingredients

  • 6-8 slices bacon
  • 3 tbsp sesame seeds
  • 3 nori sheets
  • 3 cups kimchi
  • 4 1/2 to 5 cups white rice-chilled
  • 1 tbsp toasted sesame oil

Step 1

Cut bacon into 1/2 inch pieces. Toast sesame seeds in lg skillet over med heat until golden, shaking pan every 2-3 min. Cut nori sheets in half, then into 1/2 strips. Heat lg cast iron skillet over med-high heat, add bacon, fry 6-8 min until almost cooked thru, drain kimchi saving the liquid, raise heat to high and stirfry kimchi until browned, 7-8 min. Add rice, reserved liquid, sesame oil and half of nori strips. Continue to cook, turning and flattening with spatula until it forms a golden crust (about 8 min).
