Ingredients
- Frying oil, such as safflower oil or vegetable oil with omega 3's
- 1 cup Mexican beer
- 1 cup flour
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and black pepper
- 4 thick (6 oz) pieces sustainable white fish, such as cod, haddock, or pollock
- Lemon wedges, malt vinegar, and tartar sauce for serving
Preparation
Step 1
Preheat oven to 275 degrees Place rack over baking sheet Fill counter top fryer with oil or pour few inches oil into large Dutch oven Heat oil to 375 degrees.
In bowl whisk together beer, 6 to 7 minutes. Drain on wire rack and season with salt and pepper.
Coat fish in beer batter and fry to deep golden, 6 to 7 minutes. Drain on wire rack and season with pinch more salt. Keep warm in oven on rack set into baking sheet
Serve up with lemon wedges, malt vinegar, and tartar sauce
