Farfalle with Mushrooms & Spinach

Ingredients

  • 6 oz farfalle pasta
  • 1 Tbs olive oil
  • 1 med onion, chopped
  • 4 oz mixture of mushrooms ( I used baby bella, shitake & oyster)
  • 3 cloves garlic, minced
  • 4 cups spinach, thinly sliced
  • 1 tsp thyme leaves, chopped
  • 1/8 tsp fresh ground pepper
  • 2 Tbs shredded Parmesan

Preparation

Step 1

1. Cook pasta according to package directions. Drain.

2. In a large skillet, heat oil over medium heat. Add onion, mushrooms and garlic and cook, stirring occasionally, until tender, 2-3 minutes. Stir in spinach, thyme and pepper and cook until spinach is slighlty wilted, about 1 minute.

3. Toss mushroom and spinach mixture with pasta and sprinkle with cheese. Serve
