Stilton Shortbread

Ingredients

  • 1 c Stilton Cheese (about 4 oz/125 G)
  • 3/4 c Unsalted butter (at room temperature)
  • 1/4 tsp salt
  • 1 3/4 c all-purpose flour
  • 1 egg (slightly beaten)
  • 1/2 c finely chopped walnuts or pecans

Preparation

Step 1

Preheat oven to 350F. Line 2 large baking sheets with parchment paper.
In a large bowl, using a fork, combine cheese and butter until blended but still slightly lumpy. Sprinkle with salt and gradually add flour, stirring until thoroughly mixed. Gather into a ball. Pinch small pieces of dough and roll into 1/4 inch balls. Place on prepared baking sheets and use the back of a spoon to flaten to about 1 inch (or roll out dough on a floured surface to 1/4 inch thickness and cut with small cookie cutter, then place on baking sheets.) Brush tops with beaten egg and sprinkle with nuts.
Bake for 10-12 minutes or until golden.

Make ahead: Let cool, place between layers of waxed paper in an airtight plastic container and freeze for up to 1 month.

Tip: Always place dough on a cool baking sheet as a warm one will cause dough to soften and spread
