PORK CHOPS, APPLE AND SWEET POTATO CASSEROLE

Ingredients
- 1/2 Cup all purpose flour
- 3/4 tsp salt
- 3/4 tsp freshly ground pepper
- 6 thick, boneless pork loin chops (1 inch thick) trimmed of fat
- 2 tbsps vegetable oil
- 4 sweet potatoes, peeled, thickly sliced
- 1/2 cup packed brown sugar
- 3 apples, peeled, cored, thickly sliced
- 1/2 cup dry white wine

Preparation
Step 1
Using a plate or shallow dish, combine flour, and a 1/2 tsp each of salt and pepper and coat chops on all sides. In a large heavy frying pan, heat oil over medium high heat until hot and brown chops for three to four minutes a side.
Transfer to a greased glass ovenproof dish, 13 by 9 inches. Spread half the potatoes over the chops.
Sprinkle with 1/3 of the sugar. Spread with half the apples, and then with another 1/3 of the sugar. then add layers of the remaining potatoes, apples and sugar. Pour wine over mixture and sprinkle with the remaining salt and pepper.
Cover with aluminum foil and bake in oven preheated to 350F for 75 minutes, or until pork shows just a hint of pink remaining. Uncover and bake for another 15 minutes or until the apples are browned.
