Chicken or Turkey Meatballs

While chicken or turkey meatballs aren't really a variation on meatballs (chicken and turkey are meat, after all), for many kids and adults chicken or turkey meatballs are a light change of pace from the regular old beef meatballs. You can either buy ground chicken or turkey at the grocery store, or you and your kids can put boneless skinless chicken thighs to the food processor and pulse (major supervision, of course) until the meat is finely chopped.
Ingredients
- 1 pound ground chicken or turkey
- 1/2 cup breadcrumbs
- 1/3 cup milk
- 1 egg, beaten
- Salt and pepper
- 1 tablespoon olive oil

Step 1
1. Soak the breadcrumbs in the milk until they have absorbed all the liquid. Mix together the chicken or turkey, moist breadcrumbs, beaten egg, and a little salt and pepper until everything is combined.
2. With wet hands, form the meat into small balls.
3. Heat the olive oil in a sauté pan over medium heat and cook the meatballs until browned all over and cooked through, about 15 to 20 minutes.
