Marvelous meatloaf cupcake with mashed potatoes

Ingredients

  • Sauce:
  • 1/2 cup smoky sweet bbq sauce
  • 1/3 cup raspberry honey mustard
  • 1/4 cup thai chili roasted garlic sauce
  • 2 tbsp. brown sugar
  • Meatballs:
  • 1 lb. ground beef
  • 2 tsp. garlic
  • 2 tsp. spinach and herb mix
  • 1 tsp. seasoned salt
  • 1 egg
  • 1/2 cup fine bread crumbs
  • 1 tbsp. worcestershire sauce

Preparation

Step 1

Preheat oven to 350 degrees F.

Prepare sauce by mixing all ingredients and set aside. Blend all meatball ingredients and form into cupcake size meatballs. Press into muffin tins and top with prepared sauce. Bake for 40 minutes. Ice the meatloaf cupcakes with warm mashed potatoes and bake until the tops are nicely browned.
