Ingredients
- CITRUS BUTTER,
- 1 stick butter, room temp.
- 1 tbls. lemon zest
- 1 tbls. orange zest
- 1 tblsp.parsley rough chop
- 1 tsp. dill rough chop
- salt pepper to taste
- FISH IN PARCHMENT
- four 5-6oz.boneless skinless salmon fillets
- half bulb fennel sliced thin
- 1 small zucchini sliced thin
- 1 shallot sliced thin
- 2 oranges cut into segments
- 4 tbls.citrus butter
- salt pepper to taste

Step 1
1-preheat oven to 400
2-combine ingredients for citrus butter
3-cut out 4 large ovals of parchment paper.brush softened butter along edges of paper. place fillet on one half of paper,salt and pepper to taste
4-top with fennel,zucchini,shallot and 3-4 orange segments.Put dollop of citrus butter on top and seal parchment by folding in half, roll up edges and twist ends.
5-place parchment packages on baking sheet
6-cook 10-15 minutes until parchment becomes puffy and slightly brown.
