GARLIC*****Spaghetti with Garlic, Olive Oil and Breadcrumbs

Great for both and easy too
14/03/14 - Update - Topped each serving with two large, chili-dusted, seared scallops. Yummy! In that case however, there was too much pasta - reduce by 1/3.
It also works topped with Roasted Cod in Garlic Butter - ditto on the amount of pasta

Ingredients

  • 3 - 1/2 ounces Catelli smart spaghetti or spaghettini
  • 3 tbsp. evoo
  • 3 - 4 large cloves garlic, or 1 clove elephant garlic, very thinly sliced or chopped semi-coarsely
  • generous pinch red pepper flakes
  • pinch of dried or fresh oregano
  • freshly ground black pepper and Maldon salt, to taste
  • 6 tbsp. panko
  • 1/4 lemon, zested and juiced
  • 1/4 cup freshly chopped parsley
  • 1/4 cup coarsely grated Romano cheese

Preparation

Step 1

* Start the garlic about 30 minutes before you want to put the pasta in the water.

* Combine oil and garlic in a small frying pan and cook over LOW heat, stirring occasionally, until garlic foams and is sticky and straw-coloured. This takes about 30 minutes.

* Put the water on to boil and at the same time, turn the heat up under the garlic until just under medium. As the garlic cooks, break it up into smaller pieces, if using sliced garlic.

* About 3 - 4 minutes before pasta will be ready, add pepper flakes and fry for a minute or so. Add panko, salt, pepper and oregano and saute until breadcrumbs are browned and crispy, stirring frequently to prevent from burning.

* Drain pasta, reserving 1/2 cup or so of the water and return it to the pot. Add chopped fresh parsley, lemon zest and a squeeze of fresh lemon juice and 3/4 of the breadcrumb mixture. Mix well, adding pasta water as needed to obtain desired consistency.

* Plate and grate romano cheese over each serving, then sprinkle with remaining breadcrumbs and serve
