Mile High Lemon Pie

Ingredients

  • 8 egg yolks
  • 1 c sugar
  • 1 envelope unflavored gelatin
  • 1/2 c water
  • 1 T grated lemon peel
  • 1/2 c lemon juice
  • 1/4 tsp salt
  • 8 egg whites
  • 1/4 tsp cream tartar
  • 1 c sugar

Preparation

Step 1

Prepare a 9 inch baked pie crust.

In saucepan, mix yolks, 1 c sugar, gelatin, water, lemon peel,lemon juice and salt. Cook over medium heat stirring till just boils. Chill in refrigerator, stirring occasionally till mixture mounds slightly.

Beat egg whites and tartar till foamy. Beat in 1 c sugar, 1 T at a time, beating till stiff and glossy.

Fold in lemon mixture and pile into baked shell. Chill overnight till set.
