Ingredients
- 2 lbs. boneless skinless chk. brsts, cut in 1/2.
- 2- 10oz. pkgs. frozen broccoli spears
- 10 oz. can cream of chk. soup
- 1/3 c. half & half
- 1/2 c. grated mild cheddar cheese
- 1/2 tsp. curry powder
- 2/3 c. mayo
- 3/4 c. dry stuffing mix
Preparation
Step 1
Place chicken breast in 12" x 8" glass baking dish covered w/ plastic wrap. Microwave on high 12 mins., rearranging chicken half-cycle. Remove chicken from dish, pour excess liquid out. Cook both pkgs. broccoli spears according to directions. Arrange spears evenly on bottom of pan. Lay chicken breasts on top. Combine soup, half & half, cheese, curry powder, and mayo. Pour over chicken. Sprinkle dry stuffing mix over top. Bake uncovered at 375 for 35 mins.
