Oatmeal Cake

Great recipe for a pot luck. People LOVE IT.
This is a great cake. I sometimes add a diced apple to the batter. I make it in two 8 x 8 in pans, and freeze one.

Ingredients

  • First....
  • 1 C Quick Oats
  • 1 1/2 C hot water
  • 1/2 C unsalted butter
  • Second....
  • 1 C sugar
  • 1 C Brown Sugar
  • 2 eggs
  • 1 1/2 C flour (sifted)
  • 1 t. baking soda
  • 1 t. cinnamon
  • 1/1 t. nutmeg
  • Topping...
  • 1/2 C Butter
  • 1/4 C Brown Sugar
  • 1 t. Vanilla
  • 1 C Coconut
  • 1 C nuts (walnuts)

Preparation

Step 1

makes 24 2 inch pieces

First - Pour the hot water over oats and butter. Let stand for about 20 minutes.

Meanwhile combine the Second ingredients and mix with the oats.

Pour into an oiled and floured 10 X 13 inch pan.
Bake for 30 minutes at 350 F.
When the cake is almost done make the topping.

Combine butter and sugar and boil into a syrup. Add Vanilla. Sprinkle coconut and nuts over cake when it is hot. Pour syrup mixture over and put under broiler until browned.
