Ingredients

  • 2 med red bell peppers
  • 1 dried ancho pepper, stemmed and seeded
  • salt
  • 1 TBSP EVOO
  • 1 TBSP red wine vinegar
  • 1/4 tsp sugar
  • black pepper
  • Crushed red pepper
  • 2 - taste garlic cloves, chopped
  • 1 slice whole wheat bread
  • 4 , 6 ounce halibut fillets
  • cooking spray
  • 4 lemon wedges

Preparation

Step 1

Preheat broiler

Cut belle peppers in half, discard seeds and membranes. place bell peppers skin side up on baking dish, flatten. broil 10 minutes or until black. Add ancho, broil 2 minutes. Put in paper bag, close tightly. Let stand 5 mins.

Place bell peppers, ancho, salt, oil, red wine vinegar, sugar, pepper, ground red pepper, garlic and bread in food processor, process til smooth

heat large skillet, sprinkle salt on fish. coat pan with cooking spray, add fish to pan, cook 5 mins each side, or until desired doneness. top with sauce and serve with lemon wedges.
