This recipe can be made with buttermilk by using 2 cups buttermilk in place of milk, decreasing the baking powder to 3 tsp. and adding 1 tsp. baking soda. Add nuts or other desired foods to the batter by sprinkling across the batter before closing the lid of the waffle iron.

Ingredients

  • 2 cups sifted all-purpose flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 2 cups milk
  • 4 eggs, separated
  • 1 cup salad oil or melted butter

Preparation

Step 1

Start heating waffle iron per manufacturer's instructions. Sift flour, baking powder & salt. Combine milk, egg yolks and oil (or melted butter) and add to the flour mixture. Beat egg whites until stiff peaks form; fold egg whites into batter. When waffle iron is ready to use, pour batter into center of lower half until it spreads about 1" from edges. Bring cover down gently. Cook as manufacturer directs. Do not raise cover during baking. When waffle is done, lift cover; loosen waffle with fork; serve at once.
