Black Bean & Corn Salad

Ingredients

  • 1.5 cups Black beans, drained and rinsed (1 can)
  • 2 cups canned corn, drained
  • Bell Peppers, combination of red, green and yellow is best, use 1/3 each
  • 3 green onions, sliced
  • 2 Tbs. chopped Cilantro
  • 2 small Serrano peppers, finely chopped
  • 1 Tbs. olive oil
  • 2 Tbs. Red wine vinegar
  • 1.5 tsp. lemon juice
  • .25 tsp kosher salt
  • .12 tsp, red pepper flakes
  • .5 tsp ground coriander
  • .5 tsp. cumin
  • Serves 5, n

Preparation

Step 1

Seed and finely dice the Serrano pepper. Use protection for your hands and keep hands away from eyes. Dice the peppers. Combine with beans and corn. Whisk dressing in a bowl. Stir dressing into salad ingredients and refrigerate to blend flavors, stirring occasionally. Make ahead several days for the flavors to meld. Total recipe serves 5.
