Ingredients
- 4 c. granny smith apples, peeled and cut in 1/4" cubes
- 1 c. sugar
- 2 large eggs, beaten lightly
- 1/2 c. canola oil
- 2 t. vanilla
- 2 c. flour
- 2 t. baking soda
- 2 t. cinnamon
- 1 t. salt
- 1 c. raisins
- 1 c. chopped walnuts
Preparation
Step 1
in a large bowl toss together apples and sugar. In a small bowl whisk together the eggs, oil and vanilla. In a third bowl stir together with fork the flour, soda, cinnamon and salt. Stir the egg mixture into the apple mixture; add the flour and stir in the batter until just combined. Batter will be stiff. Stir in raisins and walnuts. Divide the batter between 24 greased muffin tins. Bake 325* for 25-30 minutes.
These are best eaten right from the oven, but you can enjoy them a day or 2 later also. Can also freeze.
