Prosciutto Stuffed Pork Tenderloin

Ingredients
- 1 pork tenderloin, trimmed
- 4 thin prosciutto slices
- 1/4 cup breadcrumbs
- 1 teaspoon chopped fresh thyme
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 pound fresh mushrooms, sliced
- 1 garlic clove, minced
- 1 cup dry white wine
- 1 cup chicken broth

Step 1
1. Slice tenderloin down the middle, to "butterfly" it. Overlap prosciutto down the length of the pork, hanging over both sides.
2. Mix breadcrumbs, 1/2 teaspoon thyme, 1 tablespoon olive oil. Place on top of prosciutto and gently roll tenderloin and tie.
3. Mix salt, pepper 1/2 teaspoon thyme and rub on the outside of the tenderloin. Let stand for 30 minutes.
4. Heat oven to 350. Using a oven safe skillet, heat 1 tablespoon oil in skillet. Brown tenderloin about 7 minutes and place in oven, for about 30 minutes. Remove roast.
5. Add mushrooms and garlic to skillet, saute 6 minutes. Add wine and broth and cook until thickened, about 12 minutes. Slice roast and serve with mushroom sauce.
