Midwestern Chowder

This is one of my favorite soups in the wintertime. It's hearty and creamy and delicious!

Ingredients

  • Rue:
  • 4 c diced potatoes
  • 1 c carrots – shredded
  • 1 c celery-shredded
  • 1 cup onion, chopped finely
  • 3 tsp salt
  • ½ tsp pepper
  • 4 cups boiling water
  • Chix bullion cubes for flavor
  • Velveeta
  • 2 cans corn
  • ½ c margarine
  • ½ flour
  • 4 c milk
  • Make Rue, pour into veggies
  • Add 20 oz Velveeta cheese
  • 2 cans corn, drained

Preparation

Step 1

Make Rue, pour into veggies
Add 20 oz Velveeta cheese

Simmer until veggies are tender.
