Crab Cakes, Courtyard Cafe's

Ingredients

  • 1 tablespoon olive oil
  • 1/3 cup green pepper, chopped
  • 1/3 cup red pepper, chopped
  • 1 pound crabmeat
  • 1 egg
  • 2 tablespoons relish
  • 32 tablespoons mayonnaise
  • 1/4 cup crushed
  • ritz crackers
  • 2 tablespoons fresh parsley, chopped
  • juice from 1/2 lemon
  • salt and pepper to taste
  • 1 tablespoon butter, for sauteing
  • 1 tablespoon olive oil, for sauteing

Preparation

Step 1

In a large, heavy skillet over medium heat, heat the 1 tablespoon of olive oil. Add the peppers and saute for 4-5 minutes or until soft.

In a mixing bowl, blend the sauteed peppers with the crabmeat, egg, relish, mayonnaise, crackers, parsley, salt, pepper and lemon juice. Blend well.

Shape the crabmeat mixture into 2 ounce patties. Set aside.

In the large, heavy skillet, heat the olive oil and the butter over medium heat. Add the crabmeat patties and saute 2-3 minutes per side, or until golduse mor oil-butter mixture as needed.en brown. (cokk 3-4 patties at a time to avoid crowding).
