Chicken Waldorf Salad

Ingredients

  • 2 boneless, skinless chicken breasts, cooked and cut into 1/2-inch cubes
  • 1 cup celery
  • 1 cup dried cranberries
  • 2 small red apples, cored and cut into 1/2-inch cubes
  • 1/4 cup walnut pieces of sliced almonds
  • 6 T. fat-free plain yogurt
  • 6 T. mayonnaise
  • 1/4 tsp. ground cinnamon

Preparation

Step 1

Combine chicken, celery, cranberries, apples and buts in medium bowl; toss well. In a small bowl, whisk together yogurt, mayonnaise and cinnamon. Spoon dressing over chicken mixture; toss gently to coat. Refrigerate leftovers immediately.
