Garlic & Rosemary Steaks

  • 1/2 cup+ extra virgin olive oil
  • 12 whole garlic cloves, peeled
  • 3-4 sprigs of fresh rosemary
  • 3 boneless rib or strip steaks, cut into 2 inches thick
  • Salt
  • Fresh Ground pepper

Step 1

Place the oil and whole garlic cloves in a large skillet or saute pan. Cook over medium high heat until garlic is light golden brown. Remove from heat and stir in rosemary sprigs, turning to coat with the oil. Set aside.

Heat the grill to medium-high heat. Season steaks with salt and pepper. Place steaks on grill and cook until bottom is dark brown, about 5 minutes. Turn steaks over and cook other side for another 5 minutes. The meat should be rare. Let beef rest for about 15-20 minutes. Slice meat on an angle.

Reheat the skillet with the oil, garlic, and rosemary. Place the steak slices and any juice in the skillet and cook for a minute or two, turning frequently and then season with fresh ground pepper. Transfer meat to a platter and pour the oil and juices over the meat, including the garlic and rosemary.
