Ingredients
- 1 c butter
- 2 c sugar
- 4 oz freshly squeezed orange juice (from 1 1/2 oranges)
- 2 T orange zest
- 2 eggs
- 5 c flour
- 2 t baking powder
- 1 t baking soda
- 1 c buttermilk
- Orange icing
- 2 c powdered sugar
- 1/4 c butter, softened
- 3 T freshly squeezed orange juice
- 1 t grated orange zest
Preparation
Step 1
Preheat oven 350 degrees. Cream butter and sugar in lg bowl until light and fluffy. Add the orange juice and orange zest and mix well. Add the eggs and beat until blended. Combine the flour, baking powder and baking soda in a bowl. Add to the creamed mixture alternately with the buttermilk, mixing well after each addition. Drop the dough by 1/4 cups 1 in apart onto a greased or parchment paper lined cookie sheet. Bake for 14 min or until golden brown. Remove to a wire rack to cool completely. For smaller cookies, drop by teaspoonfuls and bake for 11-12 min.
Icing: combine all ingred and mix well, adding additional orange juice to reach consistency. Spread over cooled cookies.
