Ingredients
- 3 tbs olive oil
- 1 medium yellow, onion; chopped
- 1 red pepper, seeded and chopped
- 1 stalk celery, chopped
- 2 garlic cloves, minced
- 1 gallon chicken stock
- 3 tbs garlic salt
- 3 tbs ground white pepper
- 10 each yellow corn tortillas; roughly torn
- Assorted condiments: See below
Preparation
Step 1
Heat olive oil in large stock pot. Sautee onions, bell peppers, celery and garlic for 4-5 minutes until soft. Add chicken stock and mix well. Add seasonings to broth and simmer for 45 minutes. Turn off heat adn add corn tortillas. Stir and allow to sit for 30 minutes. Strain broth through a small-hole colander and discard remaining solids. Add broth to another stock pot and bring to a boil. Once hot, ladle over your choice of condiments.
CONDIMENTS:
Cooked diced chicken, diced tomato, sour cream, diced avocado, grated jack cheese, thin strips of fried corn tortillas, diced onion, or fresh cilantro springs.
