Crustless Quiche

Ingredients

  • 1 ½ to 2 cups mixed vegetables and/or meat
  • shredded cheese: cheddar, swiss
  • 4 eggs
  • 1 ½ cups milk or cream

Preparation

Step 1

Saute 1 ½ to 2 cups mixed vegetables and/or meat:
Your choice based on taste - peppers, garlic, mushrooms, spinach, onions, ham, bacon, broccoli, etc. (Note: if using vegetables with a lot of moisture saute until moisture gone_
Sprinkle with herbs of choice (basil, perpper, etc.)

Place vegetables/ meat in deep dish 9" pie plate.
Cover with shredded cheese: cheddar, swiss, etc.

Mix together 4 eggs and 1 ½ cups milk or cream until light and frothy.

Pour over cheese. Sprinkle with paprika if desired.

Bake in 375 degree oven for 30 minutes. Check with knife inserted in sides to see if it comes out clear. Centre will still be a little soft. Let stand for 5 to 10 minutes before serving.
