Old-Fashioned Vegetable Beef Soup

Ingredients

  • 1 1/2 pounds beef
  • 8 cups water
  • 3 stalks celery, chopped
  • 3 large carrot, chopped
  • 2 red onion, chopped
  • 1 (28 oz. can) italian style tomato, undrained and chopped
  • 1 bay leaf
  • 1 ½ teaspoons sea salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon marjoram, dried
  • 2 cups frozen green lima beans
  • 1 cup frozen kernel corn
  • 1 cup frozen green peas

Preparation

Step 1

Combine first 12 ingredients in a large Dutch oven.
1. Bring to a boil; cover, reduce heat, and simmer 1 hour.
2. Add lima beans, corn, and peas.
3. Return to a boil; reduce heat and simmer, uncovered, 15 minutes.
4. Remove bay leaf.
