Ingredients

  • 2 cup Biscuit mix
  • ¼ cup, 1/3 cup Sugar
  • 2 Eggs, separated
  • 2/3 cup Milk
  • 2 Tbsp Vegetable oil
  • 12 slices Ripe banana
  • 12 Cherries, halved
  • 12 Walnut halves
  • 2/3 cup Coconut

Preparation

Step 1

Pre heat oven to 400 Deg. Combine biscuit mix & ¼ cup sugar. Beat egg yolks, milk & oil together. Stir into dry mix just until moist. Spoon ½ Tbsp of batter into 12 paper-lined muffin cups. Place banana slice, cherry half & walnut half in each. Top with remaining batter. Beat egg whites until peaks form; gradually add remaining sugar & beat. Fold in coconut & spoon over batter. Top with remaining cherry halves. Bake at 400 degrees for 14-18 minutes until done.
