Light But Hearty Tuna Casserole (skinny)

Ingredients

  • 3 c uncooked yolk free noodles
  • 1 can reduced fat reduced sodium cream of mushroom soup, undiluted
  • 1/2 c fat free milk
  • 2 T reduced fat mayonnaise
  • 1/2 t ground mustard
  • 1 can 5 oz white water packed solid tuna
  • 1 jar (6oz) sliced mushrooms, drained
  • 1/4 c chopped roasted sweet red pepper
  • Topping
  • 1/4 c dry bread crumbs
  • 1 T butter melted
  • 1/2 t paprika
  • 1/4 t Italian seasoning
  • 1/4 t pepper

Preparation

Step 1

Cook noodles according to package directions.

In a large bowl, combine the soup, milk, mayonnaise and mustard. Stir in the tuna, mushrooms and red pepper. Srain noodles; add to soup mixture and stir until blended. Transfer to 8 in square baking dish coated with spray.

Combine topping ingredients; sprinkle over casserole. Bake at 400 for 25-30 min our until bubbly.
