Choose mushrooms and cherry tomatoes that are roughly the same size as your meat, and keep them whole. Cut large mushrooms in half.

Precook firm vegetables like broccoli and cauliflower by dropping them into boiling, salted water for about 2 minutes.

Don’t crowd your skewer. Leave some breathing room around the meat and vegetables so the heat can circulate.

Keep meat and vegetables the same size (1½-inch pieces) for even cooking.

Cut onions in half widthwise. Remove skin, then cut each half into quarters. Thread 2 to 3 layers on the skewer at a time.

Make Mediterranean Marinade

Mediterranean Mariande:
In a small bowl, whisk together olive oil, olive brine, vinegar, rosemary, salt and garlic. Toss meat with half of marinade. Cover and refrigerate for 1 hour, or overnight. Toss vegetables with remaining marinade before threading onto skewers, discarding garlic before grilling.

Make kebabs: Thread meat and vegetables onto skewers. (If using wooden skewers, soak in water for 30 minutes first to avoid burning on the grill.) Preheat grill to medium-high. (If using the spice rub instead of the marinade, carefully oil the grates.) Grill kebabs, turning occasionally, until meat is cooked through and vegetables are tender, 5 to 8 minutes.
