- 10 oz. skinless boneless turkey breast scallopini
- 2 tbsp. flour
- 1 tbsp. evoo
- 2 cloves garlic, minced
- 2 tbsp. white wine
- 1/2 cup chicken broth
- 1/2 lemon, zested and juiced
- 2 tbsp. capers
Preparation
Step 1
Sprinkle turkey cutlets with salt and pepper and dust lightly with flour.
Saute turkey in oil over medium heat until just golden on both sides - don't overdo - and remove to a plate and keep warm.
Add garlic to oil remaining in pan and saute for 30 seconds or so.
Increase heat to high and add chicken broth. Boil until thickened and syrupy, adding more broth as necessary to create enough sauce.
Reduce heat to low, stir in lemon juice, capers and parsley if using and serve over cutlets.
