Preparation
Step 1
Mini Applesauce Muffins
Preheat oven to 400 degrees.
Grease mini muffin pan and set aside.
In the bowl of an electric mixer, cream together butter and sugar.
Add eggs, one at a time, until well combined.
Stir in applesauce and vanilla.
Add flour, baking powder, salt, cinnamon and nutmeg and stir until just combined.
Using a tablespoon scoop, add batter to wells of muffin tin.
Bake for 10-12 minutes or until a toothpick inserted in center of muffin removes cleanly.
Allow muffins to cool for five minutes before removing to a wire rack.
Servings: 42 mini muffins
