Tropical Granola

Preparation
Step 1
Adjust oven rack to mid-upper position. Preheat oven to 350. Line a cookie sheet with parchment paper. Combine maple syrup, honey, vanilla and almond extracts and oil in a small bowl. Set aside.
Toss together remaining ingredients, except for dried fruit, in a large bowl. Pour liquid mixture over dry ingredients and stir until well coated. Transfer mixture into a large, rectangular baking dish.
Bake, and remove every 5 minutes from oven to stir and fold over mixture. This will take about 15 minutes and mixture will be toasted golden. Transfer mixture to another flat baking dish to cool to room temperature. Mix in dried fruit. Store in sealed container.
