Vegan Cheese

Below is a versatile "cheese" recipe that can be used for for Crackers and veggies, filling for lasagnas and thinned to a sauce for veggie pasta.

Ingredients

  • 1-2 cups cashews or Brazil nuts or both mixed
  • Juice of 1 lemon
  • 1 TBS nutritional yeast
  • 2 green onions
  • water to cover nuts

Preparation

Step 1

Place into a blender, nuts with water to cover.
Blend until creamy. Add lemon and nutritional yeast. Remove from blender and mix with chopped green onions. If using for a lasagna layer, mix with chopped fresh basil, oregano, rosemary, garlic.
