Texas Caviar Salsa

Ingredients

  • 1 can pinto beans
  • 1 can black-eyed peas
  • 1 can shoe peg corn
  • 1 large jar diced pimentos
  • 1 small green, red, and yellow pepper
  • ½ cup green onions

Preparation

Step 1

½ cup apple cider vinegar
½ cup sugar
½ cup canola oil
½ tsp. salt and pepper

Mix together and refrigerate overnight for best flavor.
Drain well before serving with Tostitos (Scoops)
