Ingredients
- 3 large Eggs
- 2 cups Sugar
- 1 cup Oil
- 2 cups Zucchini -- grated, raw
- 3 teaspoons Vanilla
- 3 cups Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1/4 teaspoon Baking Powder
- 3 teaspoons Ground Cinnamon
- 1 cup Chopped nuts
Preparation
Step 1
Beat eggs till foamy. Add sugar, oil, zucchini and vanilla. Mix together flour, salt, soda, powder, cinnamon; add to egg mixture. Stir, add nuts. Put into 2 greased loaf pans. Bake at 350' for 1 hour
