Red Quinoa & Black Bean Salad

If corn is in season remember fresh is always best! Otherwise frozen or canned will be just fine. Makes a great side dish or mid-day snack. Enjoy!

Ingredients

  • SALAD:
  • 1 cup red quinoa
  • 1 (14-ounce) can black beans, rinsed & drained
  • 1 red pepper, chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 2 green onions, chopped
  • 1 cup fresh, canned, or frozen corn
  • 1 small avocado, chopped into 1-inch pieces
  • DRESSING:
  • 4 to 5 tablespoons fresh lime juice (juice from 2 small limes)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 garlic clove, minced
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon ground cumin

Preparation

Step 1

Bring 2 cups of water to a vigorous boil. Add 1 cup of Red Quinoa, cover and bring to low-medium heat. Let simmer for 15 to 20 minutes or until all of the water is absorbed.

While quinoa is cooking, chop the vegetables and prepare the dressing. Mix the dressing ingredients by hand or in a blender.

Allow quinoa to cool after cooking for about 5 minutes, then fluff with a fork.

Add the beans and vegetables and toss well.

Finally, drizzle the dressing over the salad and add salt and pepper to taste.
