Italian Sausage Grilled with Pasta and Vegetables

  • 5 5 mild 5 mild Italian Sausage links
  • 1 1 each large 1 each large red and green bell pepper, stemmed, cored and cut lenghtwise
  • 4 4 Roma 4 Roma tomatoes, cut lengthwise into quarters
  • 3/4 3/4 cup 3/4 cup Italian dressing
  • 2 2 cups 2 cups uncooked penne pasta
  • 2 2 tbsp 2 tbsp chopped fresh basil
  • 1 1 tbsp 1 tbsp grated parmesan cheese

Preparation

Step 1

Preheat grill to 325 or medium heat. Place large pot of well salted water on high and bring to a boil.

Place sausage links on grill, turning occasionally, without piercing. Brush bell peppers and tomatoes with 2 tbs. Italian dressing. Add peppers and tomatoes to grill, turning feequently until crisp and tender. Remove sausage once fully cooked (165 degrees).

Cook pasta as directed and drain. Cut sausage into 1/2 inch slices. Chop bell pepper and tomatoes into 1 1/2 inch pieces. In a large bowl, toss pasta, sausage, peppers, tomatoes and remaining dressing together. Sprinkle with basil and parmesan cheese. Serve hot or chilled.
