Cod Livornese, Claremont Cafe's

Ingredients

  • 1 pound center cut cod filets (2)
  • 1 pound russet potatoes, cooked and cut into wedges
  • 4 cups tomato sauce
  • 1/2 cup lobster stock
  • 1/2 cup black olives, pitted
  • 1 tablespoon capers
  • 1 clove garlic, minced
  • salt and pepper to taste
  • fresh parsley, for garnish

Preparation

Step 1

Preheat the oven to 400 degrees.

In a deep casserole, place the cod, potatoes, tomato saude, lobster stock, olives and capers. Sprinkle with the garlic, salt and pepper.

Roast in a 400 degree oven for 12-15 minutes, or until the fish is firm to the touch.

Serve hot with your favorite vegetables and some garlic bread..
