Donna's Mandel Bread (Jewish Biscotti)

Ingredients

  • 6 eggs
  • 2 cups oil
  • 2 cups + extra, sugar
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 6 cups + extra, flour
  • 1 cup chopped nuts
  • cinnamon

Preparation

Step 1

Preheat oven to 350°.
In an electric mixer, beat eggs. Add 2 cups sugar, oil and vanilla to mix and then add baking powder, 6 cups flour and nuts. Remove from the mixer and add more flour until your fingers are not sticky. Mold into 9 loaves and put on an ungreased baking sheet. Bake in oven for 30 minutes. Remove from the oven, reduce temperature to 225°. Slice the loaves into 1/2 inch slices. Mix sugar and cinnamon together and dip the slices. Return to the baking sheets and bake for 45 minutes. Cool and put into airtight containers. These freeze well!
