Hollandaise Sauce

Ingredients

  • 2 egg yolks
  • 3 Tbsp lemon juice
  • 1/2 cup butter or margarine
  • Dash cayenne pepper

Preparation

Step 1

Put egg yolks and lemon juice into a saucepan. Beat until well blended.
Add 1/4 cup butter to the egg yolk mixture. Place over low heat.
Stir briskly with wire whisk until butter is melted. Add remaining butter and cayenne pepper.
Stir briskly until butter is melted and sauce is thick. Serve at once. (Do not overcook sauce or it will separate.)
