Preparation
Step 1
Pat pork dry. Season generously with salt & pepper. Rub with citrus zest mixture. Refrigerate for at least one hour.
In the meantime, prepare the sauce. Combine all ingredients in a small bowl & let sit for at least 30 min
To cook pork, heat grill to med-hi. Let pork come to room temperature. Oil grill, then grill pork to temperature of 145, 15-20 min. Let rest 5 min. Slice thinly on the diagonal & serve with Mojo sauce.
