Quiche Lorraine

Ingredients

  • 6 slices bacon
  • 1 medium onion, chopped
  • 8 oz Swiss cheese, shredded
  • 4 eggs
  • 2 cups milk
  • 1 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/8 tsp pepper
  • 1 pie crust

Preparation

Step 1

Bake crust in 425 degree oven for 5 minutes. Remove to wire rack to cool.
Fry bacon in small skillet until crisp, drain all but 1 Tbsp fat. Crumble bacon.
Saute onion in bacon fat until soft. Sprinkle cheese evenly over the bottom of pie crust. Add bacon and onion.
Beat eggs in bowl, slowly beat in milk, salt, nutmeg, and pepper. Pour egg mixture into pastry shell.
Bake at 450 degrees for 15 minutes. Lower oven temperature to 350 degrees and bake 15 minutes, or until center is almost set, but still soft. Let stand 15 minutes before serving.
