Ingredients
- 1 1/2 1 1/2 1/2 C warm water
- 2 2 2 T veg oil
- 2 2 2 t instant yeast
- 2 2 2 T dk brn sugar
- 3 3/4 3 3/4 3/4 C bread flower
- 4 4 4 t kosher salt

Step 1
whisk first 4 ingredients together in mixing bowl, let stand 3-5 mins until yeast makes it foamy.
whisk flour and salt together in bowl.
Add dry ingredients into bowl with wet, then mix with dough hook for 5 minutes. When it pulls away from sides, remove to floured board, knead for about a minute, then put into oiled bowl. Cover w plastic and let sit at room temperature for an hour, or until doubled in size.
punch down , then remove to board. cut dough into quarters. cut each quarter into thirds.
take each piece and put onto lightly oiled surface, then roll into about 22” rope. shape into a U, with open end away from you. there should be about a 2” gap between ends. crisscross ends at the middle. cross again, then bring ends to bottom. If confusing go to You Tube for directions!
Transfer to flour lined baking sheet. Cover w plastic and leave for 20 minutes to proof. While proofing bring 4 cups of water with 1/4 C baking soda to a boil. Add pretzel to water, Leave 25 secs, then flip (using 2 spatulas) for another 25 seconds, remove to wire rack. Let them dry on rack for about 5 mins
Lightly oil baking sheet, sprinkle bottom with pretzel or kosher salt.
Put pretzels on baking sheet and sprinkle with more salt.
put into 425 degree oven. bake 15 to 20 mins. should have deep mohagany color. For even baking turn and rotate pans halfway thru baking.
