Salmon or Shrimp Patties

Can be baked or fried. Lemon Dill Sauce is excellent with these. Can substitute cooked chopped shrimp or fish, or ham, chicken, etc. - just process it so that it is very fine. Can use leftover mashed potatoes for a fluffier croquette. You can also substitute bread crumbs, panko, flour or cornmeal.
Ingredients
- 1 can Salmon - undrained
- 1/3 cup finely minced onions
- 1/4 tsp. black pepper
- 1/4 tsp. Cajun seasoning
- 1/4 tsp. Old Bay seasoning
- 1 Tbsp. chopped parsley
- 1/4 tsp. lemon zest
- 15 saltine crackers - finely crushed
- 1 large egg - well beaten
- 1/8 c. water
Preparation
Step 1
In a bowl, add salmon, onion, pepper, Cajun & Old Bay seasonings, parsley and lemon zest; gently toss. Add cracker crumbs, egg and water. Shape into 4-6 patties.
Heat oil and add patties, cooking until browned. Drain on paper towels.
Bake:
Line baking sheet with aluminum foil and brush with oil or spray with Pam. Place patties on baking sheet, dab with oil and bake in 400 degree preheated oven, turning once, for about 20-25 minutes or until golden brown.
You can also scoop mixture into muffin tins (fill about 1/3 full) and then bake. Spray tins with Pam first.
You can substitute fresh cooked salmon, or well drained tuna, cooked shrimp or fish, leftover meats, ham or chicken. Left over mashed potatoes make the croquettes as little fluffier but you can use bread crumbs, flour or cornmeal instead of saltines. You can also coat the patties with additional bread crumbs, panko, flour or cornmeal before frying or baking.
