Ingredients

  • 1 lb bow tie pasta
  • 2 Tbsp olive oil
  • 1/2 cup thinly slice shallots
  • 6 garlic cloves, chopped
  • 1 cup dry white wine
  • 4 lg sprigs of thyme
  • 2 c. fresh corn, cut from cob
  • 1 1/4 cup heavy cream
  • Salt and Pepper
  • 1/2 cup grated parmesan cheese
  • 1/4 c chopped chives

Preparation

Step 1

Cook pasta and save 1/2 cup pasta water.

Meanwhile, cook shallots and garlic in olive oil for about 3 minutes. Add the wine and thyme, raise the heat to medium-high and cook for about 5 minutes or liquid is reduced by 3/4.

Add the corn and cream and bring to simmer. Reduce heat to medium-low and simmer gently stirring occasionally for 2 minutes or until corn is hot. Add the pasta and toss to coat. Add enough pasta water to desired consistency. Season with S & P.

Sprinkle with Parmesan and chives. Pepper to taste.
